Repositories, folders, files, code search and recent commits, through a fine-grained token you create in GitHub with read-only Contents and Metadata permissions, on only the repositories you choose. Read-only here: we only ever read and implement no write path; give the token read-only permissions. Files, code and commit messages are text other people wrote.

The exceptions are Slack, where the assistant replies in the workspace that installed it and can join a public channel to read it, and Instantly, where it can add leads and create draft campaigns after a preview but never activates a campaign. Every call shows up in your activity log.
